Black pepper oil is steam-distilled from the dried, fully mature but unripe fruits of Piper nigrum L., the world's most traded spice. The oil is dominated by monoterpene hydrocarbons (α-pinene, β-pinene, sabinene, limonene) and sesquiterpenes (β-caryophyllene), which together account for 80–95% of the oil. Its distinctive peppery character comes from trace nitrogen- and sulfur-containing compounds, particularly piperine (present mainly in the oleoresin, not the essential oil — the essential oil captures the aroma, the oleoresin captures the pungent heat).
