Coconut oil is extracted from the kernel (copra) of Cocos nucifera, the quintessential tropical palm tree that has been called the 'tree of life' across South and Southeast Asian cultures for millennia. Two principal forms are available: virgin coconut oil (VCO), obtained by cold-pressing fresh coconut kernel without chemical refining, retaining the characteristic coconut aroma and flavor; and RBD (Refined, Bleached, Deodorized) coconut oil, which is neutral in aroma and flavor with a higher smoke point. Coconut oil is unique among vegetable oils for its exceptionally high saturated fat content (>90%), dominated by medium-chain triglycerides (MCTs) — particularly lauric acid — which give it remarkable stability, a solid consistency at room temperature (<24 deg C), and well-documented antimicrobial properties. Coconut oil is exceptionally stable due to high saturated fat content. Store in tightly sealed containers in a cool, dry place. Melting point is approximately 24-26 deg C; solidification and re-liquefaction do not affect quality. Shelf life: 2-3 years for virgin; 3-5 years for RBD. Resistant to rancidity under proper storage.
