Juniper berry oil is steam-distilled from the ripe, dark purple-blue berry cones of Juniperus communis, an evergreen conifer with the widest natural distribution of any woody plant, spanning the northern hemisphere from the Arctic to the Mediterranean. The 'berries' (technically fleshy cones) take 2-3 years to mature on the tree, developing their full aromatic complexity during this slow ripening process. The resulting essential oil has a distinctive fresh, green-woody, slightly peppery aroma with balsamic-sweet undertones, immediately recognizable as the characteristic note in gin.
