Jasmine hydrosol (jasmine water) is the aromatic aqueous co-product from the steam distillation of fresh jasmine flowers (Jasminum grandiflorum) for the production of jasmine essential oil or jasmine 'ruh' (the traditional Indian jasmine attar distillation). Jasmine flowers are unique in that they continue to produce and release their fragrance after picking, requiring the flowers to be harvested before dawn and processed immediately to capture the peak aromatic expression.
